Lemon Cake

Ingredients
3/4 cup (175g) SR flour
1 tsp baking powder
3/4 cup (175g) caster sugar
3/4 cup (175g) soft butter
3 eggs
1 large lemon—zest, juice

Method
Preheat oven to 190C and grease cake pan.
Grate zest of lemon and juice needed (50ml) Save 30 ml for icing.
Sift flour and baking powder into bowl and add remaining ingredients.
Beat until smooth and pour into greased tin.
Bake for 30-40 min, checking to stop burning.
While still hot poke with a fork all over to allow icing to drip through.

Icing Ingredients
1/2 cup (125g icing sugar)
2 tblsp (30ml) lemon juice
Water

Icing method
Add icing sugar to bowl and add lemon juice and water and beat until smooth and runny enough to coat cake.

Massaman Beef Curry

Ingredients
1 kg topside steak, diced
1 jar Ayams Massaman paste
1 tablespoon minced garlic
1 teaspoon minced ginger
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon ground cinnamon
2 tablespoon beef stock powder
4 bay leaves
400 ml can coconut milk
400 ml can coconut cream
2 onions, sliced
6-8 lge potatoes, cubed
1 cinnamon stick
2 star of anis

Method
Add beef and onion to slow cooker.
Add massaman paste, cumin, garlic, ginger, spices, bay leaves, cinnamon stick, star of anis and stock and mix well.
Add potatoes, coconut milk.
Cook for 3-4 hours.
Before serving add coconut cream and stir through.

Serve with rice

Serves 6-8 people

Mince Chop Suey

Ingredients
500g mince
1 large onion, chopped
1 tablespoon curry powder
5 cups water
2 packs Coles GF Chicken Brown Rice Noodle Soup 210g
1 cup frozen beans
1 cup frozen peas
1 cup carrot, sliced
1 can corn kernels
4 stalks celery, sliced
3 cups cabbage, shredded
Cornflour for thickening

Method
Brown mince and onion together and drain off fat.
Add to slow cooker and add water, soup, curry and all vegetables and cook on medium for 6-8 hours.
If mixture needs thickening mix 1 tblsp cornflour in a small amount of water until smooth and add to slow cooker.

Serve with boiled rice or pasta of your choice

Serves 6 people

Quiche Pie

Ingredients
1 Sheet frozen Puff Pastry (GF pastry can be used)
1 cup Bacon
1 cup Onion, diced
1 cup Tomato, diced
1 cup Grated cheese
Mixed Herbs or Italian Herbs
4-6 Eggs
Paprika

Method
Preheat oven to 180C. Line greased dish with pastry.
Spread the bacon, onion and tomato over pastry and sprinkle with herbs.
Break eggs over ingredients or use beaten eggs.
Top with cheese and sprinkle with paprika.
Bake for 25 minutes.

Serving—depends how big your pan is as to how many people. For more pies add extra ingredients.

Serve with salad and GF chips

Creamy Salsa Chicken

Ingredients
500g chicken breast, diced
1 x 300g jar salsa
1 x 35g packet taco seasoning (2.5 tblsps)
¼ cup water
125 ml sour cream
1 lge Capsicum, chopped
1 lge onion, diced
4 sticks celery, sliced thinly
2 lge carrots, sliced thinly
Olive oil spray

Method
Brown chicken in oiled large pan and add onion.
Add salsa, taco seasoning, vegetables and water to pan and cook slowly.
Once chicken is cooked, about 25 minutes, mix through sour cream
Serve onto plates with rice.

Serves 4

Options—if you don’t want to use vegetables in the meal that is OK but it will make less.

Reen’s Reflections—April/May 2025

While we were at Tea Gardens we enjoyed meeting with the people at TGBC (Tea Gardens Baptist Church) for the Sunday Service, Bible Study and meals (lunches & dinners). On Thursday 10 April we headed back to Granville.

While here we had pet sitting duties at Silverdale for the school holidays, morning and night. There was also shopping to do in preparation for Easter, some sewing to do and other smaller jobs for me and Nyssa. We love spending time with our families.

It is always nice to catch up with the everyone at GCBC (Granville Community Baptist Church) of a Sunday.

We continue to enjoy catching up with our friends R&H each Friday for dinner and chatting. After we got home on Friday 25 April, at 2130 hrs I received a phone call from Liz (brother Brett’s wife) letting us know that Brett was unwell and in hospital in Maitland and that his scan has showed that it was cancer and that it looks quite bad. This meant that I had to work out when to visit him and after talking with my sister and brothers we agreed we would all visit on Saturday 10 May, all praying that Brett lasts until then. There were lots of phone calls across us all as we monitored Brett’s progress.

We attended the Camping & Caravan Show at Rosehill where we purchased a composting toilet for the 5R. It was delivered on Monday 5 May and Dean installed it. We will hold our thoughts on this for future comment. He also got busy and washed the roof, the front and back of the 5R; the before and after photos show how good a job he did.

I visited Westmead Hospital on Tuesday 6 for a scan and then a follow-up appointment on Tuesday 20. The scan came back showing improvement; the doctor was happy and I am allowed to drive again.

After some discussion we decided that for our visit with Brett & Liz we would stay at Tea Gardens and travel to Singleton each day. We left Granville on Thursday 8 May at 1035 hrs and arrived at Tea Gardens at 1230 hrs. See While we were camped in Tea Gardens we travelled to Singleton on Friday, Saturday and Sunday, to spend time with Brett & Liz. It was great to spend time with my sister/sister-in-law and brothers on the Saturday, we took lots of photos and remembered lots of history. As we all left that day we felt that he wouldn’t be with us much longer. We didn’t his passing to be as quick as it was. On the Tuesday 13 May as we were packing up to head back to Granville, the phone rang and Liz rang and simply said, “He’s gone”. We left Tea Gardens at 1230 hrs and headed back to Granville and arrived at 1430 hrs after a good trip. It had been a long, rainy, anxious day and both of us were very exhausted at night. It is hard to believe that my baby brother is gone and we are thankful he wasn’t in pain for too long.

The next couple of weeks there have been lots of phone calls between my sisters and brothers trying to prepare a eulogy for Brett’s service (planned for 13 June). Dean busied himself with helping Nyssa by driving kids to different activities and odd jobs (gutter, dryer and wardrobe door repairs).

Reen’s Reflections—February/March 2025

On Tuesday 4 Reen had an appointment at Westmead Hospital which went OK (a scan and check-up needed in May) and also had an appointment with her arthritis doctor in Parramatta. Websites renovations have kept Dean busy, he is working on four different websites.

There were also a couple of jobs for Nyssa, a box lid and oven install that needed to be done. We also had a few little jobs in the 5R, Dean installed a couple of fans to assist with managing the heat and he pulled the coffee machine apart and fixed it.

Tuesday 17 found us on the road again on our way to Tea Gardens for few weeks. Dean will be working on the Church’s website while at the same time enjoying the relaxing atmosphere.

Getting to our campsite wasn’t as easy as we thought. As we were travelling up Mt White there was a loud bang from the motor which stopped us until our tow arrived and the issue was sorted out. For our trip info please see Tea Gardens

Granville, Tea Gardens, Granville

Tuesday 18 February—Thursday 10 April

Its Tuesday and we are off, heading north to Tea Gardens. While travelling up Mt White we heard a loud bang from the engine and the truck lost power, so we puttered up to the Mt White Weigh Station where they allowed us to park while we sorted out towing. After many phone calls and explanations and hours (∽4 hours) a flat bed truck arrived, problem, not long enough to carry both truck and 5R. Then a heavy tow truck arrived and after a lot of chatting they decided use this to tow the truck/5R together to Iveco at Beresfield. The heavy tow could only take one passenger so Dean and I travelled in the other truck, and we were dropped off at the servo in Kariong which is about 100 kilometres from Iveco. Reen signed up to UBER and ordered a ride for us.

When we got to Beresfield it was good to see our truck/5R had arrived safely. The mechanics had a look at the issue and it was merely the intercooler hose had come off the turbocharger (nobody knows why). Once this was reconnected and the computer errors cleared we were on our way again. The first order of business was dinner at Service Centre and then on to Tea Gardens.

We arrived at the Tea Gardens Baptist Church at 2100hrs, exhausted, so we parked in the carpark and stopped for the night. Early the next morning we moved the 5R to the back of the church, under the gum trees where we will stay until we leave.

Once we were settled in Reen set up the printer and commenced scanning, labelling and filing photos. There are still two 15 litre crates of photos to be done. Dean was introduced to the ride on tractor mower and spent a couple of hours mowing. We ventured down to Bennetts Beach and had lunch while watching the view, which was quite beautiful even though it was a little overcast.

Each Sunday we headed to Church (such a long walk) and it’s always great to see everyone again and enjoy time of fellowship over lunch at the club. Each Tuesday we shared in the Bible Study group and also had dinner at the club with them. Reen attended the World Day of Prayer meeting and was involved with reading a Bible passage.

We travelled down to Iveco Beresfield again to have a recall issue (computer update) looked at. While in the area we visited Bunnings, BCF and Kings Four Wheel Drive to purchase stuff. When we got back Dean installed the new awning pegs and the weather station to the van.

We visited Karuah, a small town (originally on the main highway) with a great bakery and great views of the Karuah River and Swan Bay which is quite remote with no shops, on the shore of Port Stephens with an interesting mix of old small houses and newer fancier, larger homes.

On Saturday 15 we ventured back to Penrith, for the day, to attend Joel’s 40th Party, it was great to catch up with family, our grandchildren, friends and meet new ones. It was a great venue with great food even though it was quite warm.

I can’t believe that over many days, I have managed to scan/empty the second to last crate of photos, about 1650. They are all labelled and filed and now only one crate to go. I must admit that as they were filed I was quite amazed to see the different holidays we have had through our life together.

Dean has continued to work on websites with the Awake to Israel site going live on 1 March with a few adjustments completed. He has also managed after lots of hours to complete the Tea Gardens Baptist site which went live on 16 March, with again minor changes as people find them. At the moment his next focus is Granville Community Baptist site, which needs updating and refreshing.

We took a drive down to Bombah Point, which is where we first stayed in a cabin at the Ecotourism Village for 10 days back in 2000 (25 years ago). Is was then that we decided we loved the area. We sat and watched the sea at Hole in the Wall, beautiful. We enjoyed the time of exploring but managed to take it a little to far and found out that sand is not good for our truck, as we needed a little help from some passers-by in a 4WD to get us unbogged.

There is always another adventure when travelling and this time it was nature; over the next 11 days we had over 200ml of rain. Each day were were watching the pond (retention basin) at the back of the Church continue to rise, we took photos as it got closer and closer to us. When the wet weather finally stopped the water was about two metres from the van. No we didn’t need our gumboots, quite. It slowly went down over the next week.

Meeting new couples at the church was interesting, we went out for morning tea to the Boatshed and chatted and we also had lunch there with the church secretary and her hubby. The music team, which included Reen (she has been singing each Sunday) and Dean, also met together for a light fellowship lunch, which was delicious. There were some good friendships started among the people.

As is always the case, eventually it is time to move onto the next place and for us this meant heading back to Granville.

Granville, Camden, Granville

Friday 3—Saturday 18 January

Leaving Granville at 1120 hours we headed to the Poplars Caravan Park at Camden. It was 1245 hours, lunchtime, when we arrived and after a little issue we got ourselves set up in Site 10 all ready for a busy two weeks. We visited the Information Centre, had a look around town, did a little shopping for meals and had dinner at the Royal Hotel.

This trip wasn’t meant to be for sightseeing as we would be looking after Vera for school holidays, and it was lots of fun while at the same time quite exhausting and the days were long. Joel took us on an explore trip to Bents Basin where we got to see the park and its camping and swimming areas. Through it all we enjoyed the time spent at Silverdale with Joel, Beck &Vera. On Saturday 18 we left the Caravan Park at 1010 hours and headed back to Granville.

Reen’s Reflections—January 2025

With thanks to God for his continuous love, presence and direction for us we head into this year ahead.

January—found us settled in Nyssa & Brad’s driveway at Granville. We were heading to Camden on Friday 3. We would be minding Vera out at Silverdale, NSW for the next 2 weeks, from Monday to Friday, while Joel and Beck were working. The trip from Camden to Silverdale and back took us about 30 minutes each way. Vera and I played card games, Barbie, trampoline with sprinkler, swinging and other activities each weekday. Dean joined in games with us at times but he also spent time doing some website designs that kept him busy. For two days during the holiday Dean, Vera and I visited Nyssa and the kids for the day. The kids loved the time together playing card games, etc.

On the weekends Dean spent time building his block construction Basset Hound that he got for Christmas and we also purchased a weather station which Dean set it up on a pole and attached it to the awning. While in Camden we had lots of rain and some major storms. It was great to have the time with Joel, Beck & Vera.

On Saturday 18 we headed back to Granville. Doreen had a follow-up appointment at Westmead Hospital on Monday 20, all went well. Dean finished his Basset Hound and Reen spent time playing Harry Potter SCRABBLE and HP & Dr Who Monopoly with the kids, which was lots of fun.

It was interesting to watch the weather station readings, Dean had attached it to the carport and it worked well. Joel asked us for help with his path destruction/construction and we spent two Wednesdays out at his house.
