Mexican-style Meatballs

Ingredients (serves 5)
500g Meatballs
439g jar Medium OR Hot Salsa
420g can Mexican OR Black Beans, drained
1 green Capsicum, chopped
1 Red Onion, quartered & sliced
Paprika (for sprinkling on top)
1 cup Shredded Tasty Cheddar
8 Tortilla Tacos OR
2 packs 90 second microwave Mexican Rice GFO

Method
Preheat oven to 200°C (180°C fan-forced). Grease a large baking dish.
Place meatballs, capsicum and onion in the prepared dish. Spray with olive oil spray. Season with freshly ground black pepper. Bake for 15 mins or until lightly browned.
Spoon the salsa evenly over the meatballs mix. Add the beans and sprinkle with cheese. Sprinkle a light coating of paprika over the cheese. Bake a further 25 mins or until cheese melts and meatballs are golden.
For the tortilla option place a large frying pan over high heat. Spray tortillas with oil spray. Cook, in batches, for 1-2 mins each side or until charred. Divide tortillas and meatball mixture among plates to serve.
For the GFO use the rice divided among 5 bowls and add meatball mixture.

Quiche Pie

Ingredients
1 Sheet frozen Puff Pastry (GF pastry can be used)
1 cup Bacon
1 cup Onion, diced
1 cup Tomato, diced
1 cup Grated cheese
Mixed Herbs or Italian Herbs
4-6 Eggs
Paprika

Method
Preheat oven to 180C. Line greased dish with pastry.
Spread the bacon, onion and tomato over pastry and sprinkle with herbs.
Break eggs over ingredients or use beaten eggs.
Top with cheese and sprinkle with paprika.
Bake for 25 minutes.

Serving—depends how big your pan is as to how many people. For more pies add extra ingredients.

Serve with salad and GF chips
